This Michelin-starred restaurant occupies a converted warehouse in the Old Town, where the Radford family has created a 100% natural wine list that changes constantly. The kitchen works with foraged ingredients from the Lothians—pine needles, wild garlic, sea buckthorn—alongside Highland beef, Borders lamb, and Orkney scallops. Their fermentation shed out back produces house-made vinegars and koji. Sommelier Jo Radford oversees a list emphasizing small European producers, skin-contact whites, and aged vintages from the Loire and Jura. The dining room is stripped-back industrial with exposed beams and candlelight. Reservations essential for dinner; the wine list is available for purchase to take home.
