Tim Webber and Monique “Mon” Millton are the husband-and-wife team behind Manon Farm, a biodynamic vineyard they established in 2016. Perched on a ridge in Forest Range, at around 600 m elevation, their farm is a vibrant patchwork of vineyards, fruit trees, vegetable gardens, and native forest.
Land & Philosophy
Manon’s 25-acre estate includes roughly 15 acres under vine, growing in soils rich with mica schists, iron-stone quartz, red clay, and ancient topsoil. Tim and Mon farm biodynamically and dry-farm their vines, avoiding irrigation and synthetic inputs. Instead, they use seaweed, herbal teas, and mineral infusions to nourish the land, aiming to create a thriving, balanced ecosystem. Their farming is deeply connected to the rhythms of nature, with an emphasis on biodiversity and soil health.
Winemaking Approach
Grapes are hand-harvested and transformed with minimal intervention. Fermentations occur naturally, and wines are bottled unfined, unfiltered, and often by gravity. Patience is key—releases happen only when the wines feel ready. The range includes expressive cuvées such as Geoponika, High Paradise, Peaches, Forest Red, and Farm Rosato, each reflecting the unique character of their site and the season.
Personal Roots
Mon’s background in biodynamic farming comes from her upbringing in New Zealand, while Tim learned winemaking through hands-on experience, mentorship from respected natural winemakers, and a strong intuitive approach. Beyond wine, Mon works with plant-based preparations—creating hydrosols, tinctures, and biodynamic treatments—while Tim experiments with new plantings, from Gamay and Trousseau to Savagnin, Aleatico, and Malvasia. Many of these begin as seedlings in their vegetable garden before finding their way into the vineyard.
