Teenage Sweethearts, the Valley of Vines & a Son Named Paulin

Hélène Zarmati and Christophe Comte were teenage sweethearts when Christophe faced a decision that would shape both their lives: take over the family farm, or follow other passions. Spurred on by Hélène's contagious smile, he took the plunge. More than two decades later, with their son Paulin now in the vines, the Comtes make some of the most honest, crushable natural wines in the Ardèche — biodynamic, sulfur-free, and bottled by gravity on the lunar calendar.

Origin — From Polyculture to the Pure Vine

The Comte family has farmed in Valvignères for four generations. In Christophe's great-grandfather's day, the farm raised animals and grew a variety of crops — vines were present, but all the grapes went to the local co-operative. When Christophe's father Gilbert took over in 1979, he left the cave coopérative and built his own cellar, selling his wine to négociants.

Christophe joined the domaine in 1994, and the first bottling under their own label came in 1995. His father let him take the reins of vinification alone — Christophe learned by doing, occasionally counselled by an oenologist in the early days, then gradually trusting his own instincts until he was piloting the ship solo.

Hélène came to lend a hand in 2001 — in the vines, at the cellar door, and in the office. They work in complementarity, a true tandem in every sense. Their son Paulin joined the team in November 2017, bringing youth, enthusiasm, and the promise of a fifth generation.

The shift to organic was natural — they were raising two children and wanted the vineyard to embody the same values of sustainability and health. AB certification came in 2001, but by 2008 they felt the new organic rules had become too permissive. They adopted biodynamics in 2009, certified by Demeter, and began vinifying without sulfites or any other additives.

Valvignères — The Valley of Vines

The name comes from the Latin vallis vinaria — the valley of the vine. A village apart in the Ardèche, protected from the worst of the weather, with a mild climate that makes biodynamics relatively straightforward. The clay soils demand timing: work them too wet and they compact; work them right and they give wines of deep character.

"The more we advance, the more we realise that nature does things well — even better than us." The Comtes' philosophy evolved organically: from conventional farming to AB organic to biodynamic to zero-sulfur natural wine, each step a deeper trust in the land.

The Place — Limestone, Clay & the Wild Ardèche

Valvignères sits halfway between Montélimar and Aubenas in the Ardèche, a valley preserved from the worst of the elements, where limestone and clay-limestone soils dominate. The 13 hectares are planted with a wide palette of varieties — unusual for the Rhône, deliberate for the Comtes — on vines ranging from 30 to over 60 years old.

Seven Varieties, One Philosophy

Chardonnay and Viognier for the whites; Syrah, Grenache, Merlot, Pinot Noir and Cabernet Sauvignon for the reds. The Pinot Noir is a rarity in the hot Ardèche — Christophe was convinced it would thrive in the cool nights and rich soils, and it does, yielding small, fragile clusters that demand the gentlest handling.

Biodynamic & Self-Defence

Certified organic since 2001, biodynamic since 2009 (Demeter). The soils are worked lightly, enriched with organic fertilisers and sprayed with plant concoctions that stimulate the vines' self-defence mechanisms and microbial life. Copper use is minimised. The goal is balance — letting the terroir speak in every cuvée.

Gravity & the Lunar Calendar

All wines are bottled by gravity, without pumping, in accordance with the lunar calendar. A few cuvées see a trace of SO₂ (around 10mg/L total) before bottling, but most see none at all. The approach is non-interventionist: manual harvest, natural yeast, no additives, and remontage by gravity alone.

One of Four

The Comtes are one of only four independent organic domaines in Valvignères — a small, tight-knit community of growers who chose to stay when others left for easier terroirs. The isolation is part of the charm; the protection from urban life is part of the wine.

Winemaking — From the Tips of the Fingers to the Lunar Calendar

The Comtes' cellar work is as gentle as their vineyard work. All grapes are hand-harvested — even the Pinot Noir's fragile clusters are handled du bout des doigts, from the tips of the fingers. Fermentation is with indigenous yeasts, in concrete vats or old wood, with minimal intervention and remontage by gravity.

The wines are made either sur fruit — on the fruit, expressive and immediate — or sur terroir, where the land itself is the dominant voice. Some cuvées see a brief maceration, others three weeks; some age in concrete, others in demi-muids. The common thread is no sulfur added (or a trace, around 10mg/L total, in a few cases) and no other inputs whatsoever.

Bottling is done by gravity on the lunar calendar — an old practice that the Comtes never abandoned, even as they modernised other aspects of the cellar. The result is wines that are alive, sometimes with a little dissolved CO₂ that calls for a quick carafe, always with a clarity of fruit and a sense of place that is unmistakably Valvignères.

A Family That Learns Together

Christophe learned vinification by doing, with only occasional early advice. Hélène learned the vineyard by working beside him. Paulin is learning now, bringing fresh energy to a tradition that stretches back four generations. The knowledge passes hand to hand, vintage to vintage — never written down, always lived.

A broad range from 13 hectares — whites of freshness and floral lift, reds of sun-baked fruit and herb, and the rare Ardèche Pinot Noir handled with fingertip delicacy. All are bottled without additives, most without sulfur, all by gravity on the lunar calendar.

Legacy — Four Generations, One Smile, Zero Sulfur

The Comte family's story is one of gradual, stubborn evolution — from mixed farming to pure viticulture, from co-operative to négociant to estate bottling, from conventional to organic to biodynamic to natural. Each step was taken not because it was fashionable, but because it felt true. Hélène's smile and Christophe's quiet determination have carried the domaine through nearly three decades of change.

With Paulin now in the vines since 2017, a fifth generation is learning the same lessons: that nature does things well, that the lunar calendar matters, that a wine bottled by gravity tastes different from one pumped through a hose. The Comtes are not trying to change the world — they are trying to leave their children a healthy, rich land on which they can live well.

In a valley that the Romans called vallis vinaria, where four independent organic estates hold the line against industrial agriculture, Les Vigneaux stands for the quietest kind of rebellion: continuity. The vines were here before the Comtes. The Comtes will be here after the fashions have passed. And the wine — straightforward, elegant, crushable, and delectable — will still taste of Valvignères.
