The $250 Sulfur-Free Gamble
Julien Fayard, one of Napa Valley's most sought-after winemaking consultants, is running an experiment that many of his wealthy clients would consider sacrilegious: he's making $250 bottles of Cabernet Sauvignon without adding sulfur.

Five years ago, Fayard decided to try it anyway. A Frenchman with what he calls an American winemaking spirit — "There's more freedom of expression here," he says — he wanted to push a boundary in the collectible wine space. While he's long practiced minimalist winemaking and native yeast fermentations, he's not known as a natural winemaker. The stigma attached to natural wine doesn't align with the Napa Valley Cabernet brand. But perhaps, he thought, he could change that.
"We've entered a maturity in natural wine, but there's no luxury offering in California's natural wine movement," Fayard explained. "If I did it with a $30 bottle, that would be fun, but there's really nothing that sticks out. This was to make people stop and think about, 'What is a high-end wine?' and disrupt the standards of collectors. It's really a conversation piece."
The Wines
In July 2026, Fayard released a pair of sulfite-free, single-vineyard Cabernets from two of his best sources: Martinez, located on the illustrious Pritchard Hill, and the historic Sleeping Lady vineyard in Yountville. The front labels prominently feature the words "natural winemaking" and "no sulfites added."
Crucially, he also produced sulfur-added versions of both wines — also priced at $250 — so customers could compare and discover their preference. In the sulfite-free wines, the fruit comes across as "a little sweeter and riper," with a more approachable tannin structure. Fayard estimates they're aging "four to five years" faster than their sulfur counterparts, meaning customers don't have to wait as long for the wines to open up, though they can still enjoy a "10 to 15-year journey."
Why It Might Work
Fayard's argument is provocative: high-end winemakers actually have better tools for making quality natural wines — without the flaws that stereotype the category — than many classic natural winemakers. Precision, control, and, frankly, money enable a luxury producer to minimize the chances that microbiology goes off the rails.
It starts in the vineyard. Fayard has access to premium sites and has handpicked ones with natural acidity and a track record of ripening evenly year over year — critical when working without sulfur's preservative power. In his own high-tech winery, strict sanitation protocols limit undesirable bacteria growth. The wines are monitored by "sensors everywhere," allowing timely adjustments. "We're not touching the wine but the environment is under our control," he said.
Classic natural winemakers in California, often selling wines for roughly 85% less than Fayard's price point, operate under significant financial constraints. Many work at custom crush facilities where they can't fully control sanitation, cellar temperature, or real-time monitoring. Fayard, by contrast, has an easy out: if conditions demand it, he can add sulfur without anyone accusing him of selling out.
The Headache Question
The experiment may appeal to a mindful audience, though Fayard insists the idea wasn't driven by sulfur's frequent (and largely unfounded) association with wine headaches — a notion he dismisses as "a grandma take." New research from UC Davis and the University of San Francisco suggests the real culprit behind red wine headaches may be quercetin, a flavanol found in red grape skins that impedes the body's ability to fully metabolize alcohol.
Still, if the headache narrative brings more curious drinkers to his wines, Fayard admits he doesn't mind. The bigger goal is to challenge what a luxury California wine can be — and whether the most established rules of the cellar are due for reconsideration.
