Noita Winery – Finland’s First Urban Natural Winery

Tucked away in the artistic village of Fiskars, about an hour west of Helsinki, Noita Winery is quietly redefining winemaking in the Nordics. As Finland’s first urban winery, Noita is a bold experiment in terroir, technique, and sustainability—blending Old World grapes with Finnish creativity.

Founded by Simon McCabe, a former brewer turned winemaker, Noita was born from a passion for fermentation and a desire to push boundaries. Instead of growing grapes in Finland’s challenging climate, McCabe and his team source organic grapes from Burgenland, Austria—an area known for its rich viticultural heritage. The grapes are hand-harvested and transported north to Fiskars within 50 hours of picking, preserving their vitality and freshness.

Once in the cellar, Noita follows a strict low-intervention philosophy. All wines are spontaneously fermented with native yeasts. There is no fining, no filtration, and minimal to zero sulfite use. The result is a range of vibrant, expressive wines that reflect both the Austrian terroir and the Nordic spirit.

Sustainability is at the core of Noita’s identity. After pressing, the leftover grape pomace isn’t discarded. Instead, it’s repurposed into spritzers, used by the neighboring Fiskars Brewery to make hybrid beers, and ultimately distilled into grape pomace moonshine. This multi-stage reuse showcases the winery’s commitment to circular production and innovation.

Noita's wine range is eclectic and playful, with labels that hint at their rebellious nature. Among the most notable cuvées are “Hex Bag” (a textured orange wine), “Behemoth” (a bold red), “Loop Garoo,” “Flux Lumen,” and “Space Echo”—each one a statement of craft and creativity. The winery also produces pét-nats, vermouths, and other unique beverages that defy classification but remain rooted in natural wine principles.
