Noma Brings Its Residency—to Los Angeles amidst Greenland invasion..
It must be surreal to find that the Pop up you have been planning is taken place in a country that s invading a part of the one you belong. Shits hitting the fan not only in Greenland and Davos but also LA as there is “ Out Rage “ at the Price of 1500..It’s LA and i’m sure it will be Booked out , also Is there people protesting outside Louis Vuitton and Porsche…Probably Not.
It’s taken quite a while in the works for around a decade and two years ago, with the help of a few good friends, they found a place they ell in love with. ( This of course before Trumps interest in invading and taken over Greenland , Noma as you know is Danish.. However this spring, Noma will spend sixteen weeks in Los Angeles, from March 11 through June 26, immersing itself in the city through cooking, listening, learning, and creating. The residency will culminate in a body of work deeply rooted in Southern California and will be documented as part of a special film project.
In addition to the restaurant residency, Noma will open a Noma Projects shop in Silver Lake, host a series of events with friends at MAD, and collaborate with cooks, artists, and communities across the city that the team has long admired.
The menu will be shaped by the landscape of California itself — the Pacific Ocean, the mountains, the desert, and the vast distances between them. The team will spend time getting to know local ingredients, producers, and culinary traditions, allowing those discoveries to guide what appears on the plate, filtered through Noma’s imagination and the techniques honed in Denmark.
For almost a decade, the Noma team have been trying to go to America, and it’s been close a few times.
“ it’s a dream to finally come and cook here. To learn from a whole new group of people—all the
cooks, the farmers, the fishermen, the foragers of this region.
There’s the Central Valley. The olive groves in Ojai. A coastline touched by vineyards and seafood. The
desert—what flavors are growing there? Backyard citrus spilling over fences. Fig trees strung across
freeway overpasses.
To cook here is to experiment. To remix. To step into a new nature like it’s the very first time So, what
happens when we bring our way of dreaming, thinking, working to all of this?

Why Los Angeles?
René Redzepi: There are melting pots, and then there is LA. It’s an epicenter of culture, art, and
entertainment, with one of the most interesting and dynamic food scenes in the world. In one place, we
can learn about ingredients from communities all over the world, sometimes within the same street. And
then, of course, there is the local landscape —The Pacific, the deserts, cutting-edge regenerative
farms, all within a few hundred kilometers of the city.
What can be expected from the menu?
René Redzepi: A menu that is quintessentially noma but also completely new. It will be our love letter to
this region, to what we feel and taste here, seen through the lens of a team who is lucky to have the
chance to cook here for a time. To bring this menu to life, we are exploring everything within a 300 miles
radius of LA, going into unexpected places, trying things we’ve never tasted before. For the first time
ever, we are building our test kitchen
René Redzepi: The array of ingredients we’ve seen in LA and its surroundings has been unlike anything
we’ve ever experienced. From the pacific to the deserts and valleys, the depth, knowledge, and
dedication of those who work with this landscape is simply extraordinary.
This next chapter also offers something we are quite fond of – a challenge. The biggest venture we’ve
undertaken as a team, not just in a new city and space, but bringing our entire universe to LA with a
16-week residency, a Noma Projects Shop, and MAD. We are excited to connect with new and old
friends, collaborate with the local community, and really see (and taste) the city through their eyes.
