Cuore Impavido
In the heart of the Dolomites, where rugged mountains meet rolling hills, lies a vineyard that embodies courage, vision, and respect for the land. Its name is Cuore Impavido—Fearless Heart—a fitting tribute to the bold spirit of its winemaker, Loris De Bortoli.
A vision rooted in courage
Loris’s decision to work with PIWI grapes—naturally resistant varieties such as Solaris—wasn’t just a technical choice. It was a statement of intent: to grow vines in the mountains without relying on synthetic chemicals, to embrace sustainability, and to let nature express itself freely in the glass.
At 800 meters above sea level, in Col dei Mich (Belluno), this is not the easiest path. The climate is challenging, the soils demanding. Yet, it is precisely here that wines gain their unique edge: freshness, vibrancy, and a character that could not come from anywhere else.
The land: Col dei Mich
The vineyards rest on clay-limestone soils with rocky sublayers, exposed to the south and southwest, basking in the Alpine sun. The altitude ensures large day-night temperature swings, allowing grapes to develop rich aromatics while maintaining bracing acidity.
This mountain terroir gifts the wines a mineral backbone and a bright, precise energy—qualities that make Cuore Impavido stand out.
Winemaking philosophy
The winemaking approach follows the same ethos of courage and respect:
No synthetic treatments, thanks to resistant PIWI grapes.
Manual harvest at full ripeness.
Spontaneous fermentation with native yeasts.
No filtration, natural re-fermentation in the bottle, no disgorgement.
This is wine in its purest form—alive, unpolished, and expressive of its place of origin.
