Pinot Noir - Domaine Ratte
Beautiful Aromatic Structure
This Pinot Noir comes from vines planted on marl soils, ideal for showcasing the grape’s expression, enhanced by biodynamic practices. Harvested at full ripeness by hand, with manual destemming in the vineyard, it undergoes natural fermentation with indigenous yeasts, followed by a long maceration (three weeks) without added sulfur. No filtration is done before bottling.
The first nose is highly inviting, leading to a palate with great texture and an abundance of red fruits—blackberry, elderberry, and blackcurrant. Well-structured tannins promise excellent aging potential, giving this wine remarkable depth. It pairs beautifully with red meat, cheese, or even chocolate.
