The Story

A young winery that creates wines from traditional Moravian varieties reflecting the place of origin.

Vinařství Kacetl was founded in 2018 by Michal Kacetl in the small village of Mackovice in the Znojmo region (Znojemsko). With a history of winemaking dating back centuries, this area provides the perfect backdrop for a new generation of natural winemakers [^130^][^131^][^132^].

Operating on just 1 hectare of vineyards, Michal produces around 8,000-10,000 bottles annually. As part of the Svéhlaví association, he stands alongside Moravia's most progressive young winemakers who are redefining Czech natural wine [^122^][^130^].

"In the spring we bottle the first part of the wines under screw cap. These are light, fruity wines intended for everyday drinking. The second part of production is bottled at the end of summer—these are wines aged in barrels or in kvevri, more characterful wines with respect for nature that represent our philosophy."

Kvevri Veltlínské Zelené

The oldest method of wine production in the world—fermentation and aging in Georgian kvevri (200-240L clay vessels). Highest quality grapes are hand-selected and placed in the kvevri, where they ferment and macerate on skins for several months, hermetically sealed.
