From a corner of the roastery to Brooklyn's most exciting natural wine project.
Barbichette began as an experiment in making wine to share with family and friends. In 2019, founders César Vega and Louisiane Remy made the first thirty cases of Riesling in a corner of their Brooklyn coffee roastery [^115^][^124^].
César spent his childhood in Nicaragua and Miami before moving to New York to study photography. In 2012, he launched Café Integral—a celebrated coffee company focused on Nicaraguan beans. Louisiane was raised between France, Switzerland, and New York with a background in art and fashion design. She brings a sensibility for simplicity and quality: a galette de blé noir, vintage French workwear, and windy coastal regions [^124^].
Together, they represent the perfect blend of their individual sensibilities. César contributes obsessive technique and precision; Louisiane brings artistic vision and European wine culture. What began as thirty cases has grown to seven cuvées for the 2021 harvest and beyond. The wines are now available at Leon & Son, Domestique, and natural wine shops across New York [^115^][^128^].

Barbichette is driven to showcase the full expression of New York's local fruit. Through relationships with growers in the Finger Lakes, they work exclusively with locally-grown fruit fermented naturally [^124^].
Their focus is celebrating the potential of that which is around them. Committed to a less-is-more philosophy, they source the highest quality grapes from growers whose farming practices align with their vision of celebrating terroir and quality [^124^].
All wines are made by hand using simple, manual methods without the use of added sulfites, yeasts, chemical additives, or fining and filtering. No sulfur, no added yeasts, no chemical additives, no fining or filtering—just honest, living wine [^128^][^132^].

Seneca Lake
All grapes are sourced from organic and sustainably farmed vineyards primarily nestled around Seneca Lake in the Finger Lakes region of upstate New York. The lake effect moderates temperature, creating ideal conditions for cool-climate varieties like Riesling and Pinot Noir [^118^][^116^].
County of Kings
The wines are made in Brooklyn—"right here in the county of kings." This urban winemaking approach brings Finger Lakes fruit to the city, creating a true New York wine that bridges upstate agriculture and Brooklyn culture [^115^][^128^].
Organic Growers

New York Fruit
With the intent of celebrating the potential of that which is around us, every grape is New York grown. This is local wine in the truest sense—grown and made within the same state, expressing the unique terroir of the Finger Lakes [^115^][^124^].

Tibo
"New York's MVP" (Most Valuable Pinot)—named for Thibaut Pinot, France's finest cyclist. You'll find all the classic notes of an ethereal Pinot Noir with Finger Lakes character. Light, elegant, and expressive [^120^][^117^].
Poc a Poc
"Our ode to the Roussillon." A macerated Muscat that's immediately charming and uplifting with high tones of lime zest, honeysuckle, alpine flowers, fresh roses, and a hint of black tea. Skin contact creates texture and depth [^119^][^117^].
Nuit Blanche
A skin contact Riesling from the shores of Seneca Lake. Whole cluster grapes macerate on the skins for 7 days with twice daily punchdowns. A blend of 70% Riesling and 30% Chardonnay, farmed organically and harvested by hand [^116^][^122^].
Le Blanc
100% natural Riesling with no added sulfites (<10 mg/L). The pure expression of Finger Lakes Riesling—clean, precise, and mineral. Shows the precision and consistency brought from the coffee world to winemaking [^114^][^117^].
Pourquoi Pas
60% Riesling, 40% Chardonnay. Apricot stone fruit and lime, with a tasty pithiness like from the rind of a lime; medium acidity and a little kiss of sweetness. The blend shows the versatility of Finger Lakes fruit [^131^].
Tête Bêche
100% Cabernet Franc from Seneca Lake. Lifted, pleasantly leafy, with red-blackish fruit and a nice sensation of cold soil. Ruby red with hints of cherry and ripe strawberries. A nod to the Loire Valley in New York [^121^][^117^].
Oui Non
Grown-up cherry cola meets natural winemaking. Refreshing red fruit mingles with bitter cherry and raspberry notes, delivering zippy acidity. Lively, vibrant, and utterly drinkable—perfect for Brooklyn summers [^134^][^127^].
Claro Que Si!
A pét-nat with great acidity and balance—deliciously pure bubbly wine that's easy to drink and fun to bring to a party. Be aware it can be a bit explosive on opening. Wild, alive, and celebratory [^123^][^125^].
