Élise Bougy – A New Vision of Champagne
Tucked away in the village of Les Mesneux, on the western edge of the Montagne de Reims, Élise Bougy is quietly reshaping the narrative of Champagne. An oenologist by training, Élise studied in Dijon before returning to her native region in 2016 to take over her family's small estate. Her mission: to restore balance between land, vine, and wine—guided by a profound respect for biodiversity and terroir.
Her 3-hectare vineyard holdings stretch from Les Mesneux to the iconic Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs. Over the past several years, Élise has transitioned the estate to organic viticulture, achieving Ecocert certification in 2023, and has embraced biodynamic principles since 2021.
A highlight of her work is Les Coullemets, a revered plot in Le Mesnil-sur-Oger with pure chalk soils that amplify the mineral tension so emblematic of this Grand Cru terroir. This cherished parcel once belonged to her grandmother, Marie-Louise Moriset, and remains at the heart of her family’s legacy.
Élise continues to push boundaries with Hors-Norme Vibration, a micro-series of cuvées from her most distinctive vineyards: Le Mont-Chainqueux and Chétillon de Haut. Made from the exceptional 2018 vintage, these wines spend nearly four years aging on the lees, followed by a minimum of six months in bottle post-disgorgement. Each bottle is adorned with a hand-painted label, underscoring the individuality and artistic spirit behind each cuvée.
In the cellar, Élise takes a minimalist approach: ambient yeast fermentations, full malolactic conversion, and aging across a range of vessels—wooden tanks, stainless steel, and barrels. Her wines are unfined, unfiltered, and made with little to no added sulfur, preserving their vibrancy and deep sense of place.
