The Philosophical Vigneron
A bit of a UFO in the wine world—Olivier Boulin holds a master's degree in philosophy where wine already played an important role (he participated in harvest every year while studying). He decided to vinify in Australia, Chablis, then at Sylvain Pataille in Marsannay, obtaining his BTS Viti-Oeno before becoming a winegrower's agent and even a champagne specialist at Prowein fairs [^46^][^47^].
The adventure of Le Nez de Goth stems from human encounters, debates, sharing and confrontations—what truly thrills him. His idea: to create négoce wines from organic or biodynamic agriculture, resulting from a living process [^46^].
The 17th Century Cellar
Based in Champvans in the Jura since 2015, Olivier works without owning vineyards. He sources grapes from exceptional terroirs across France—Jura, Savoie, Beaujolais, Burgundy—working closely with organic and biodynamic growers. His cellar: the space underneath his family home, dating to the 17th century [^47^][^61^].
Inspired by trailblazing vignerons like Antony Tortul (La Sorga) and Emmanuel Lançon (Domaine des Murmures), he focuses on old vines and often overlooked parcels—from forgotten crus to rows in Pupillin [^47^].

The Method
Hand-harvested fruit, traditional wooden press, spontaneous fermentation with native yeasts. Aging in the 17th-century cellar. Bottling by gravity, without additives or sulfur—pure minimalism [^47^][^61^].

The Cuvées

Fenêtre sur Lantigniehehe
Gamay from seventy year-old vines planted over pink granite farmed by the Collonge family in Lantignié. The grapes were fermented with native yeasts—ethereal, pure, and crunchy with serious granite minerality [^51^][^56^].
La Dent du Chat
100% Jacquère from Savoie. Ethereal and fresh with salty lemon on the front and a nice savory finish. Sourced from high-altitude vineyards, fermented in the 17th-century Champvans cellar [^54^][^63^].
Aligoth
From 120-year-old Burgundian vines—ancient Aligoté transformed into a magical elixir macerated for 12 hours. Definitely on the wild side, showing what old vines can give when treated with intuition [^49^][^58^].
Viva La Durasss
A bold red crafted with passion—rich, dark fruit and full of character. From Duras grape variety (likely sourced from Southwest France or Jura), made with the same minimal intervention philosophy [^47^][^59^].
Kant Ali Kant
A Vin de France red blend with philosophical wordplay on the name. Savory and classic in style, made without additives—reflecting Boulin's academic background and irreverent humor [^52^].
