Near the town of Alcamo, Alessandro Viola operates Uva Tantem winery. His vineyards are situated on the northwestern slopes of Mount Bonifitato, at around 250 meters above sea level, and are planted with local varieties like Grillo, Nero d’Avola, Nerello Mascalese, and Catarratto. Coming from a lineage of winemakers, Viola holds degrees in viticulture and oenology, having interned in Piedmont and Georgia. His winemaking philosophy is simple: use only grapes.
