AMI: A Friendship Rooted in Burgundy’s Vineyards

In the heart of Burgundy, in the village of Paris-l’Hôpital, a wine project built on friendship and passion took shape—AMI. True to its name (which means "friend" in French), AMI was born from the collaboration of Paul Perarnau and Willy Roulendes, two longtime friends with a shared love for wine.

Paul's journey began in the world of fine dining, where he honed his skills as a sommelier before moving into wine sales with London importer Dynamic Vines. Willy, on the other hand, has over 20 years of winemaking experience, having first worked at Domaine de Montille before managing the cellar at Clos du Moulin aux Moines in Auxey-Duresses.

After pursuing separate paths for several years, Paul and Willy reunited with a vision: to craft wines that truly express the terroir of Burgundy, with a focus on minimal intervention and authenticity. In 2014, they released their first vintage, marking the beginning of AMI. Today, the domaine spans 2 hectares of vines in the Maranges Valley, with an additional 4 hectares of organic grapes sourced from trusted friends across the Côte-d’Or.

A Natural Approach in the Cellar

At AMI, the philosophy is clear—let the grapes speak for themselves. Winemaking follows natural principles, with fermentations carried out by indigenous yeasts and without temperature control. The wines are never fined or filtered, and the only addition is a small dose of sulfur (10-30 ppm) just before bottling.

For Willy, AMI is more than a project—it is a creative outlet, a place where his deep knowledge of Côte de Beaune’s terroirs meets an unrestrained passion for winemaking.
