Founded in 2018 by chefs Jaime Rodríguez and Sebastián Pinzón, it’s a cornerstone of contemporary Colombian-Caribbean cuisine, driven by their Proyecto Caribe Lab, a research initiative exploring the region’s biodiversity, indigenous flavors, and traditional recipes. The restaurant emphasizes local ingredients—90% sourced from the Caribbean, with 70% from wild harvests—working closely with small producers, fishermen, and artisans, alongside the Botanical Garden of Cartagena and regional institutions
