Jacopo tends to approximately three hectares of age-old vineyards nestled in Valsamoggia. He undertakes the restoration of abandoned vineyards, embracing the practices of traditional Italian vignaioli.
His vineyard is more than just a wine-producing space; it's a harmonious blend with an orchard. Jacopo firmly believes that the distinctiveness of the vines ultimately manifests in the bottled wines. The vines draw sustenance from a combination of clay and limestone soils, enriched with visible stones. The terroir imparts a remarkable minerality, a consistent feature in Jacopo's wines.
Some of Jacopo's vines have gracefully aged over a century, weaving through woods and orchards, occasionally reaching the canopy. This nod to an age-old Italian agricultural tradition accommodates over twenty grape varieties, resembling an open-air grape library. Situated on hillsides between two hundred and three hundred meters above sea level, the soil, a medley of clay, limestone, and scattered stones, contributes to the wines' distinct minerality.
Jacopo's vineyard management revolves around preserving the incredible diversity nature has bestowed upon him. His hands-on approach involves entirely manual processes, refraining from soil intervention to safeguard these intricate ecosystems. Diversity, according to Jacopo, is the key to richness and complexity, with each grape variety contributing to the final blend in perfect harmony.
Harvested, fermented, and aged together, adhering to the Italian tradition of the field blend, all grapes undergo this journey in unity. In the cantina, Jacopo's winemaking philosophy is straightforward and precise. He firmly believes that wine takes shape in the vineyard, reflecting this by bottling his wines unfiltered, without any additions throughout the process.
