Olivier Boulin
Born and raised in the picturesque Jura region, Olivier's journey into the world of winemaking began at a tender age, surrounded by the rich wine culture of his homeland. Even as he pursued his studies in philosophy, his passion for wine led him to collaborate with accomplished vignerons across France. Notable among his influences were his experiences working alongside the legendary Antony Tortul of La Sorga and Emmanuel Lançon of Domaine des Murmures.
In 2015, Olivier embarked on his winemaking adventure, setting up his cellar beneath his family's residence in the charming village of Champvans. Each year, he embarks on a quest to discover and source grapes from venerable vines flourishing in exceptional terroirs. Olivier possesses a unique talent for uncovering extraordinary vineyards, be they forgotten plots within renowned wine regions, select rows in highly sought-after Pupillin, or lesser-known grape varieties thriving in well-established Burgundian villages. Harvesting grapes alongside his friends, he meticulously tends to the cellar work with the utmost care and patience.
Olivier is a staunch advocate of traditional winemaking methods. His preference leans toward prolonged, gentle pressing of whole grape bunches over several days, gravity-driven processes, and a meticulous aging process in time-honored oak casks. Tasting Olivier's wines offers a remarkable opportunity to rediscover familiar grape varieties and renowned regions in a new light.
