Mathilde and Sylvère Trichard are the duo behind Domaine Séléné, a natural wine estate in Blacé, Beaujolais, founded in 2012. Sylvère, trained under notable winemakers like Dominique Belluard in Savoie and Jean-Claude Lapalu in Beaujolais, took over his uncle’s 4-hectare organic vineyard, Domaine de la Tallebarde, which has since expanded to around 10 hectares, primarily growing Gamay and a small amount of Chardonnay. The couple embraces biodynamic practices, inspired by the lunar calendar (hence the name Séléné, after the Greek goddess of the full moon), and is in the process of formal biodynamic conversion. Their approach emphasizes minimal intervention: organic farming, low yields, no chemical inputs, and vinification without added yeasts or sulfites, though minimal sulfur may be used at bottling for some cuvées. They also practice polyculture, incorporating a verger and some livestock to foster biodiversity.
Their wines, including Beaujolais, Beaujolais Villages, Brouilly, and a pét-nat, are known for their vibrant, fruit-forward profiles—think crunchy red fruits and lively acidity—while maintaining complexity and depth. Sylvère’s philosophy, “Don’t try to do in the cellar what you haven’t done in the vineyard,” underscores their focus on healthy grapes and natural processes. Beyond wine, their holistic approach includes sheep and fruit trees, reflecting a commitment to sustainable, mixed agriculture.
