After studying viticulture and oenology in Bordeaux and Dijon for Olivier, and plant protection for Florence, they fell in love with Burgundy’s terroirs in 1998. For thirteen years, they honed their craft at Domaine de l’Arlot in Nuits-Saint-Georges, developing their approach around whole-cluster fermentation and biodynamics.
In 2005, they decided to leave Burgundy and return to their roots in the southern Rhône Valley. Settling near Privas in an old house in need of renovation, they began exploring the terroirs of the Ardèche region. A few years later, in 2010, they seized an opportunity: a set of old vineyards in Saint-Marcel d’Ardèche came up for sale. With this, Les Accoles was born, founded on a commitment to organic and biodynamic farming.
A Natural Yet Precise Winemaking Approach
Les Accoles wines are crafted with meticulous care and respect for the grapes. Harvests are done by hand, and the grapes are fermented with their native yeasts, mostly as whole clusters. Olivier firmly believes that whole-cluster fermentation gives the wines depth and structure. The winemaking process remains as natural as possible, although the couple allows themselves a minimal addition of sulfites at bottling in challenging years to ensure optimal stability.
