Night Harvest & Amphora Tradition
Our journey begins with a night harvest, ensuring the grapes are picked at peak phenolic maturity for maximum freshness and aroma. We honor ancient traditions by macerating the grapes in amphorae for 30 days, creating a wine with balance, depth, and an intense gastronomic character.
Fermentation & Aging
After maceration, the juices ferment in amphorae, preserving purity. Light pressings are aged in barrels, imparting a buttery texture and elegance to the wine.
