Perched on a steep, sandy hillside overlooking Highway 101, the Olson family vineyard has been a cherished property since 1882. This unique vineyard, set at 1,600 feet in elevation, thrives in the cold, foggy mornings influenced by the cool air from Monterey Bay. With limestone-rich soil mixed with decomposed granite and weathered volcanic rock, the terroir delivers exceptional wines crafted with minimal intervention.

Wines of Distinction

Seabold Cellars showcases a commitment to organic, sustainable viticulture, producing Burgundy and Rhône-inspired varieties. Each wine reflects its origins more than the winemaking process, emphasizing balance and purity. Highlights include:

Pinot Noir (Brosseau Vineyard, 2019): 50% whole-cluster fermented, rested on lees for 11 months, and offering vibrant complexity.
Red Trousseau (2021): 100% whole-cluster fermented with rich aromatics and depth.
Chardonnay: Crisp and mineral-driven, described as "stunning" and one of the finest examples in recent memory.
Limited Production: Seabold produces only 6,000 bottles annually, ensuring meticulous attention to quality.

A Sommelier-Turned-Winemaker

Seabold Cellars was founded in 2014 by Master Sommelier Chris Miller. After a distinguished career, including accolades such as Wine & Spirits Magazine’s "Best New Sommelier in America" and a Grand Award-winning tenure at Spago Beverly Hills, Chris transitioned to winemaking. His journey began in New Orleans at his mother's restaurant and continued through harvests in Walla Walla Valley and Sta. Rita Hills, culminating in the creation of Seabold Cellars.

Chris’ approach emphasizes hands-off winemaking, spending more time in the vineyards than the cellar. His passion for cool-climate sites in Monterey, San Benito, and Santa Cruz is evident in every bottle, celebrated by critics and wine enthusiasts alike.
