Grain Nature 24
Grain Nature - Marie-Thérèse Chappaz (Valais AOC)
The Purest Expression: Unfiltered, Unfined, and Sans Soufre
The Grain Nature is Marie-Thérèse Chappaz's ode to the most essential form of winemaking. This unique red wine is typically an assembly built around Pinot Noir (often blended with a small proportion of Gamay), sourced from the sunniest slopes of Charrat (like Champ Dury). Made with no added sulfites and minimal intervention, this cuvée delivers a vibrant, raw, and intensely expressive experience—a true taste of "nature" from a certified Biodynamic icon.
Tasting Notes
Color: A bright, shimmering ruby red, characteristic of its natural, minimal-intervention style.
Nose: Incredibly lifted and pure, exploding with high-toned red fruit—think fresh, crushed raspberry, wild strawberry, and cherry stone. These bright notes are beautifully layered with a touch of earth, rhubarb, and often a subtle, appealing hint of hay or smoke that speaks to its natural vinification.
Palate: Aerial, bright, and intensely juicy. The texture is light-to-medium bodied, driven by a zingy, high acidityand soft, elegant tannins. It is a clean, energetic, and thrillingly fresh wine that is highly gulpable while maintaining the complexity and finesse expected of the domaine. It finishes with an impressive, clean, mineral length.
Winemaking and Terroir
Grape Varieties: Primarily Pinot Noir (often 90%), complemented by Gamay.
Terroir: Carefully selected parcels of limestone and chalky pebbles in Charrat, which imbue the wine with great mineral tension.
Viticulture: Certified Biodynamic (Demeter/Bio Suisse), hand-harvested from low-yielding vines.
Vinification: Fermentation uses indigenous yeasts only. The wine is aged in older oak barrels for a period (around 8 months), and crucially, bottled without the addition of sulfites (Sans Soufre), resulting in a lively, unfiltered product.
Food Pairings
Its freshness and purity make it incredibly versatile, particularly suited to lighter, more delicate flavors.
Poultry: Roast chicken with herbs and sage, Quail, or light game.
Vegetables: Earthy dishes featuring mushrooms (e.g., porcini risotto) or vegetable terrines.
Charcuterie: Fine cured meats and light, fresh cheeses.
A Note on 'Nature'
