Cinsault was destemmed and fermented with wild yeasts.
After 5 days, the Aramon is added into the fermenting juice in whole clusters (flotation method). Aged for 6 months
unfined, unfiltered, no sulfates

Clos fantine was conceived by there father who wholly applied biodynamic methods ,no vinification additives, No sulfates are used in production or bottling.
No fertillîzer has been used for around 50 years, Vines therefore have acquired the term governments l love to hate ‘Natural Immunity`, making them largly resitastant to sickness and disease.
No plowing is used on the estate instead leaving the ground natural allowing for the natural ecosystem to thrive, using only sheep to keep the grasses and weeds in check.
