Stéphane Cyran / Cote de Toul ,Lorraine
Based in the northern Lorraine region, Stéphane began producing wine in 2016 after completing his BTS Viticulture Oenology in Rouffach. The Côtes de Toul AOC (established in 1998) comprises 110 hectares. Stéphane now has 3 hectares of Pinot and Gamay. Traditionally, commercial wine growing in Lorraine has been used for Champagne négoçiant purchases. However, that is changing with climate change and non-traditionalist vignerons. Since the 1980s, vines have started to be replanted in Lorraine. There are now a few avant-garde winemakers making homes in the region and using the old Gamay vines and Pinot. Stéphane makes mostly reds with the Gamay and Pinot but also produces direct-press pétillant-naturel. All of Cyran's wines are completely natural and low-intervention. All are manually pressed. He's one to watch.

Dense black fruit and a hint of spice, but a lovely lick of acid keeping it nice and fresh.
