St Julien - Beaujolais
Xavier Bénier began his career in wine as a merchant in 1993, after studying oenology in Beaune. Xavier now produces gamay to pinot noir and from chardonnay to viognier! 6.5 hectares of vines without chemicals, without pesticides and without soil correction in Saint-Julien. Saint-Julien is quite far from the crus, it is located where the granite of Beaujolais-Villages gives way to the clay-limestone of Beaujolais. The family vines remain the mainstay of the vineyard. He has since added a plot of chardonnay in Ville-sur-Jarnioux, and recently planted pinot noir nearby
Every November , Xavier makes Beaujolais Nouveau from 100-150 year old gamay vines. Vinification is done with Native Yeasts ,
Unfiltered No sulphur is added during vinification or bottling
A cool and long Fermantation 12-15 days with no pumpover
