🌱 Viticulture & Winemaking

Jas Swan’s micro-négoce project sources organic Dornfelder and Riesling grapes from steep Mosel and Rheinhessen vineyards. Grapes are hand-harvested and direct-pressed without maceration. Each variety is fermented separately in stainless steel with indigenous yeasts and a low sulphite addition (~8 g/L)
