🍇 Vinification & Philosophy

A dynamic natural red crafted by Eric Durif during his organic conversion. Each grape variety undergoes an 8-day maceration—90% destemmed Gamay in “millefeuilles” layers, 8-day maceration for Carignan and Cabernet Franc.
Post-fermentation, the wine spends 6 months on fine lees in amphora, finished unfiltered and with zero added sulphites

A vibrant expression of pure fruit and earth. Notes of wild berries and fresh red cherry move into savory layers of forest floor and subtle spice. The amphora aging gives gentle texture, crisp tannins, and a long, nuanced finish—bright yet grounded, easy to drink yet intriguing.
