🌱 Viticulture & Winemaking

Raphaël Monnier, a former teacher turned natural winemaker, farms organically since 2009. He hand-harvests heritage Jura varieties, favoring living soil and biodiversity . Fermentation is natural, made in old barrels, steel, and concrete with native yeasts, followed by light maceration. Bottled unfined, unfiltered, and with minimal or no sulphites .
