Made from old vines planted with both red and white grape varieties on a limestone slope, One Shot was aged on native yeasts and fine lees. It is a wine without any additives and unfiltered.
After 10 years of working and enjoying the vineyards as an amateur winemaker in the Arbois region, the passion for wine led to the start of a professional adventure in 2009.
Our small 2-hectare estate, located in the AOC Arbois, has been cultivated using agrobiological methods since its creation. We aim to produce very healthy grapes that require minimal intervention in the cellar.
A living soil and a balanced, healthy plant life are our two main focus areas.
Our grapes are hand-harvested, the wines are aged on native yeasts, and no chaptalization is used. The wines are neither fined nor filtered.
Sulfur may be used, depending on the needs of each wine.
Our goal is to produce wines that respect the terroirs of Arbois and express their minerality.
