Christof works biodynamically on his family's tiny 0.2 ha of Pinot vines, vinified at Peter Hermann’s cellar in Fläsch This Weissherbst is a rosé de saignée: juice bled off early during maceration, with fermentation in wood. No added sulphites and minimal intervention for purity
