Region: Chablis, Burgundy, France (Courgis; 1.1 ha of clay‑limestone parcels, one fully organic, one in organic conversion) ()
Grape: 100% Chardonnay (including some Musqué clone)
Vintage: 2022 (2020 & 2019 also available) 
Alcohol: ~12–13% ABV 
Bottle Size: 75 cl
Farming: Organic (Ecocert since 2008); small-lot, hand-harvested

🌱 Viticulture & Winemaking

  • Grapes are hand-picked, destemmed, and gently pressed using a pneumatic press ().

  • Spontaneous fermentation with indigenous yeasts in stainless steel; malolactic occurs naturally.

  • Aged 8–12 months on fine lees in used stainless and oak barrels, with no bâtonnage or racking ().

  • Bottled unfined, unfiltered, with a single small SO₂ addition at bottling ().

A precise, mineral-driven Chablis with scents of white flowers, green apple, and wet stone. On the palate, it's vibrant and focused, featuring citrus zest, salinity, chalk, and subtle honeyed lees texture, finishing with lively acidity and an elegant tension ().
