🌱 Vinification & Terroir
Hand-harvested when fully ripe; manual de-stemming performed right in the vineyard
Natural fermentation with indigenous yeasts, followed by ~3 weeks maceration in stainless steel
Aged ~18 months in neutral Burgundy barrels; minimal SO₂ at bottling, unfined and unfiltered
🍒 Tasting Notes
Brilliant ruby hue. Aromas explode with fresh red berries—cherry, raspberry, and elderberry—layered over earthy, peppery nuances
The palate offers vibrant acidity, silky fine tannins, and a chalky mineral backbone. Energetic, expressive, and purposed for both early enjoyment and cellaring
