🌱 Viticulture & Vinification
Hand-harvested Gamay from two steep, high-altitude parcels around the domaine. Grapes are de-stemmed manually in the vineyard, then fermented using native yeasts in stainless tanks, with gentle maceration for ~2–4 weeks. No added sulphites, all wines are unfined and bottled by gravity after ~8 months aging in tanks .
