Another trip to the delightful and relaxed Vi.NO.So in Amsterdam at Hotel de Goufadz and visiting FC Hyena—a converted warehouse turned arthouse cinema and bar. It’s one of the few fairs I return to regularly, not necessarily because it’s better than the rest, but because it’s practical, centrally located, and conveniently on the way to everywhere. The event is well-organized, spacious, and the wines are excellent too.

Bbirbiciù – Testa di Ghiaca Terre Siciliane IGT

Bbirbiciù, a young and vibrant project led by three friends—Davide, Agostino, and Alejandro—who are producing some of the most distinctive natural wines to come out of southern Italy. Their standout cuvée, Testa di Ghiaca, is a radiant and expressive skin-contact wine made from Zibibbo

Fermented in buried amphorae with native yeasts and no added sulfur, Testa di Ghiaca apricot, camomile, mushroom, passionfruit, and melon. Dry, textured, and lightly salty, it’s a pure expression of island terroir and natural winemaking.

Pet-Nat 2023: A Vibrant Expression of Minimal Intervention

The 2023 vintage of Petillant Naturel offers a dynamic spectrum of styles and grape varieties, showcasing both restraint and personality.

White Pet-Nat
A blend of Moscadela and Riesling, this cuvée is all about finesse. Disgorged in April, it’s dry and linear, with a light touch that lingers — the winemaker’s mantra of “less is more” clearly at play.

Rosé Pet-Nat
A standout of the vintage, this limited release of just 500 bottles blends Pinot Noir and Chasselas. Delicate bubbles, wild fruit, and a fresh lift. The label features a portrait of the winemaker — a personal signature on an already intimate wine.

Orange – Pinot Gris
From vines planted in 1974, this Pinot Gris sees three weeks on skins. The result is an elegant, lightly structured orange wine that avoids overpowering tannins. It’s a textural wine that whispers, rather than shouts.

Orange – “Unconditional Love”
A playful nod to both style and sentiment, this Pet-Nat-style orange wine lives up to its name — bright, approachable, and entirely loveable.

These bottles reflect a winemaking ethos that champions nature, patience, and personal expression. Pet-Nat 2023 is anything but ordinary.

Explosive Morello cherry character — not the subtle hint you'd find in southern Beaujolais, but bold, almost surreal cherries, like something out of a Japanese manga. Wild, funky, and unapologetically vivid.

Pretty Fun wine if you can get you hands on it.

Tenute Nynfà

Santa Ninfa, Trapani, Sicily, Italy — nestled in the heart of the Belice Valley.

This Frappato is complex and refined, grown at 350 meters above sea level on rolling hills with silico-calcareous soils.

The grapes are gently destemmed, followed by a 10-day fermentation. The wine is then aged in stainless steel tanks.

Hit of the day

Lesom – Pure Mosel Riesling, Zero/Zero

Only Riesling. All-in on purity.

From 2 steep hectares in the heart of the Mosel, Lesom produces uncompromising, zero-zero wines from their own vines—no sulphur, no additives, just Riesling and time. Fermentations start in autumn, stall through icy winters, and resume in spring, often stretching over 1–3 years. Long élevage follows. The result? Intense, aromatic wines that are crisp, clean, and deeply expressive.

The Mosel Signature:
Slate soils, sharp acidity, cool climate, and relentless slopes define this region.

A Vertical Snapshot:

  • 2021 – Sparkling, raw, electric. No SO2 or sugar. Insomniac wine—tense and awake.

  • 2022 – Aged in old 1,000L foudre. Calm, clean, slightly oxidative. Elegant with fish.

  • 2023 – Just bottled. Juicy yet complex. Zero sulphur, full confidence.

  • 2024 (in barrel) – Still fermenting. Aromatic, nervy, shaped by soil. A touch of barrique rounds it out.

Schuette

Schuette – Biodynamic Bordeaux on the Right Bank
20 minutes from Saint-Émilion

Nestled on the Right Bank of Bordeaux, Schuette began producing its own wines in 2021, though the estate and cellar have been active since 2000. The vineyard is fully biodynamic, with great care given to soil health and natural balance. Cabernet Sauvignon and Cabernet Franc grow alongside Merlot on well-tended land, shaped by an increasingly unpredictable climate.

Solis
A light, chillable red made from Merlot with a 24-hour maceration. Soft tannins, vibrant fruit. In 2023, extreme temperature shifts led to significant Merlot loss—a growing challenge in the region.

Ruptis
Crafted using semi-carbonic maceration and a slow, gentle press. With 26 hours of skin contact, the wine is then racked during the cold of winter to preserve clarity and freshness. Elegant and precise.

White Label (Zero/Zero)
No sulphur, no additives. A pure Merlot expression with 36 hours of maceration. Partial juice removal helps soften tannins for a more lifted, balanced structure.

Kiki (Pét-Nat)
A sparkling Merlot made in the ancestral method. Extended time on lees before disgorgement gives it texture, complexity, and energy. Joyful, raw, and alive.
