Fol - Ezio Cerruti
A biodynamic dry white wine crafted by Ezio Cerruti in Castiglione Tinella, Piedmont, Italy. Made from 100% Moscato Bianco, a grape typically used for sparkling or sweet wines, this still, dry expression from 60-year-old vines is a daring testament to Cerruti’s innovative spirit and commitment to organic winemaking.
Tasting Notes: This vibrant wine presents a straw-yellow hue and an aromatic bouquet of ripe apples, pears, citrus, and wildflowers, with a subtle mineral undertone reminiscent of wet stones. On the palate, it’s fresh, crisp, and well-balanced, offering bright acidity, a citrus-driven core, and a saline finish with hints of saffron and honey. The 2011 vintage delivers depth and elegance, with excellent aging potential.
Winemaking: Sourced from 7 hectares of steep, calcareous vineyards at 350-400 meters altitude, the Moscato grapes are hand-harvested and farmed organically, using only copper and sulfur. Fermentation occurs spontaneously with native yeasts, followed by 5 days of skin maceration and 12 months of aging in stainless steel and concrete vats, unfiltered, to preserve its authentic character. This minimal-intervention approach highlights the pure expression of Moscato and its terroir.
Food Pairings: Perfect with smoked fish, vegetable risottos, white meats, or blue cheeses. Its aromatic freshness also makes it a delightful aperitif or companion for seasonal dishes.
Details:
Grape: 100% Moscato Bianco
