Hand-harvested and biodynamically farmed, the grapes are destemmed and macerated separately for 2-3 weeks with occasional light pigeage, followed by a slow press. The free-run Mondeuse juice is blended with both free-run and pressed Gamay, then aged for 9 months in demi-muids (or 10 months in Spanish amphorae for some batches). Bottled unfined, unfiltered, and without added sulfites, Kovè offers deep, savory berry fruit—think crunchy raspberry, blackcurrant, and dark cherries—with wet soil, graphite, and exotic spice notes.
