🌱 Viticulture & Winemaking

Biodynamically farmed on steep granite terraces (Claives, Épalins, Seilles) at ~500 m elevation Hand-harvested in small cratesDirect whole-bunch pressing and natural settling; fermented with indigenous yeasts (no malolactic) in stainless steel and dolia 3

Aged ~12 months on fine lees; bottled with minimal sulphites and light filtration

🍇 Tasting Notes

Radiant pale-gold wine with an aromatic spectrum stretching from grapefruit zest, lime, rhubarb, and lychee to exotic fruits (passionfruit, mango), plus a floral lift (honeysuckle, muguet). The palate is voluminous yet precise—orchard fruit, juicy melon, and a grapefruit peel bitters accent—underpinned by saline minerality and fine tannins, finishing long, saline, and refreshing 

🍽️ Food Pairing

Pairs beautifully with seafood (oysters, shellfish, sushi), citrus-marinated fish, tajine (spiced with apricot or saffron), foie gras with spiced chutney, soft mountain cheeses, and more. Serve chilled (10–12 °C).
