The use of sulfur is minimal, added only at bottling, with a total of around 15mg. The wine is aged on its lees, enhancing complexity and texture.
This small parcel of Pinot in St. Pierre du Clages employs co-planting, integrating crops like rye wheat (Siegle) into the vineyard ecosystem.
