Weissherbst
Christof Ruof
Christof Ruof’s Weissherbst is a rosé wine crafted from Pinot Noir grapes in the Bündner Herrschaft region of Graubünden, Switzerland. Produced by a young, innovative winemaker based in Jenins, this wine reflects Ruof’s minimalist and natural approach to winemaking, emphasizing fresh, crisp, and fruity profiles. Since starting his winemaking journey in 2012, Ruof has worked with a tiny 0.2-hectare vineyard inherited from his family, vinifying his wines at Peter Hermann’s winery in Fläsch.
The Weissherbst is made using the saignée method, where juice is bled off from Pinot Noir grapes, resulting in a vibrant rosé. It’s described as splendid, with concentrated strawberry notes, offering a refreshing and lively character. First introduced with the generous 2018 vintage, it stands out in a region where rosé is often overlooked, showcasing Ruof’s commitment to modernizing Graubünden’s winemaking image.
